d) Machine description
1) High speed blender: Mixing evenly all the material feeding in. It consists of two part: Mixing system and electric cabinet
Flour tank: It consists of stirring and high speed mixing . During operation, flour is stirring from bottom up and by applying a high speed cutter to mix all the raw material. It can handle both dry and wet flour.
Electric cabinet: Operating in manual or automatic mode.
2) Feeder elevator: Conveying products to the rolling sheeter. This equipment also comes with a weighing system, so the user can set the exact amount of flour needed.
3) Sheeter: It consists of rolling cylinder and scraper. The rolling cylinder is used to squeeze the dough feeding in and can regulate the thickness of flour sheet, it also comes with a plug-in cooling system, this is for cooling down the rolling cylinder as it will generate heat during squeezing, and can affect product quality if not being dealt with. The thickness of flour sheet can be customized to customer needs. When starting the rolling cylinder, the scraper needs to start as well, as it will get dough accumulated on the surface of the cylinder if not scraping away.
4) Rotary cutter: Flour sheeted by sheeter and then cut into hexagon chips.
5) Continuous frying system: It is mainly used to transform inedible products into food by frying them under high temperature in certain amount of time . This system contains feeder conveyor, leaf conveyor, submerge conveyor, discharge conveyor, oil temperature detector, oil level detector and hood cover.
Feeder conveyor: Transferring products coming out of molding and cutting system to continuous fryer.
Leaf conveyor: To scatter the products feeding in and ease the frying process and help maintain products quality.
Submerge conveyor: Dragging down products under oil surface to fry.
Discharge conveyor: Outputting products after frying.
Oil temperature detector: After the heat exchanger heats up the oil which will then be recycled within the frying system, it needs to maintain oil temperature at 175ºC to 185 ºC
Oil level detector: Oil will be consumed during frying process , and when the oil surface drops down to a certain level, it will start refill oil from oil tank.
Hood cover: Preventing heat loss and thus save energy, and can ease the cleaning process when lifting up, it also contains an opening on top for exhausting foul gas ( It is recommended to attach exhaust pipes in a way that will eject foul gas outside of the workshop , that will help maintain good ventilation).
6) De-oiling conveyor: It contains the cooling fans and conveyor belt to reduce oil content.
7) Cooling conveyor: Cooling down products before seasoning.
8) Seasoning applicator: Conveying products after cooling to seasoning drum. During operation, seasoning applicator stores seasoning powder and sprinkle to the seasoning drum. It is recommended to conduct this process under low temperature as the melting point of seasoning powder is somewhat low and seasoning powder can easily absorb water, which will cause contamination.
9) Seasoning drum: Containing edges within to help mix evenly the seasoning powder with products.
10) Heat exchanger: It contains the main body , temperature detector and heater. During production process, oil flows through the continuous frying system , and will be heated up inside the heat exchanger, then will pump to the continuous fryer to provide indirect heating to the products.
11) Oil pump: Pumping the oil through the continuous frying system. It comes with a oil pressure valve which is used to detect oil volume inside continuous fryer, only the oil volume reach to certain point will the heater operate.
12 ) Oil filter: To filter out larger objects during operation. This will help reduce the possibility that objects block the oil pipes. It contains the filtering net and group of fans. Operators are needed to clean out the oil filter every thirty minutes during production.
13) Oil storage tank: When the oil is judged to be reused, then it will be stored in the oil tank. During production, the oil tank will automatically refill oil to the continuous fryer when oil volume drops.
